Hot Water for Tea: getting it right

Have you noticed that tea is the new coffee? There are tea shops popping up around town. Various coffee purveyors are adding lovely teas to their offerings. And in the world of events, hotels and convention centers are starting to notice.

As an avid tea drinker myself, I would like to send a loud message to those hotels and convention centers: DO NOT USE COFFEE URNS FOR THE TEA WATER. This is absolutely fundamental. The quality of the tea simply does not matter if the water is coming from a container that once held coffee. You must have special urns and thermoses that only have hot water in them. We can taste the coffee in our water and it simply ruins the tea.

It’s not hard. It shows that you are striving for excellence.

And all of us tea drinkers will thank you.
